Makes 4 servings
Ford Field seemed empty yesterday (because it was), but this salad is full of flavor.
¼ cup olive oil
1 Tbsp. white balsamic vinegar
1 tsp. sugar
1/2 tsp. Dijon mustard
1/4 tsp. salt
1/4 tsp. cracked black pepper
1 romaine heart, chopped
4 cups baby arugula
1 shallot, thinly sliced
4 slices bacon, crisply cooked, crumbled
½ cup crumbled blue cheese
Whisk dressing ingredients in shallow salad bowl.
Add salad ingredients; toss lightly with dressing.
Subsitute any vinegar you have on hand for white balsamic vinegar. Apple cider vinegar is really good.
