Living Wage Wings

Republicans and Democrats agree...all Americans should be earning a living wage.

Living Wage Wings
24 servings, 1 wing each

Enough for you to eat amply every day.

1/2 cup flour
1/2 tsp. paprika
1 tsp. salt
3 lb. chicken wings, tips removed, separated at joints
Peanut or canola oil for frying
1/3 cup hot sauce
5 Tbsp. butter
Blue cheese or ranch dressing
Carrot and celery sticks

In a large bowl mix together the flour, paprika and salt. Place chicken wings in bowl and toss with flour mixture until evenly coated.

Heat oil in Dutch oven or deep fryer to 375°F.  Meanwhile, combine the butter and hot sauce in a small saucepan over low heat until butter is melted.  Whisk to combine; set aside.

Fry coated wings in hot oil for 10 to 15 minutes or until golden brown and crisp. Remove with slotted spoon to paper-towel lined plate.  Toss with hot sauce mixture and transfer to serving platter.  Serve with dressing and vegetables.
