Insane Mixed Grain Tabbouleh

Insane Mixed Grain Tabbouleh


You'll love this CRAZY tabbouleh salad made with mixed grains instead of bulgur wheat.  Madness?  You be the judge...


1/2 cup fresh lemon juice
1/2 cup extra virgin olive oil
3/4 tsp. salt
1/2 tsp black pepper
1-1/2 cups chopped fresh parsley (2 bunches)
2 Tbsp. fresh mint, chopped
1 cup chopped green onions (about 8)
4 plum tomatoes, seeded and diced
1-1/4 cups mixed grain blend (Israeli couscous, orzo, baby garbanzo beans and quinoa), cooked as directed.


Whisk together lemon juice, olive oil, salt and pepper.


Combine remaining ingredients and toss gently with dressing.


Tip: 
Substitute medium bulgur, prepared as directed on package, for mixed grain blend.
