Occupy Walleye


Nobody represents the 99% better than the folks who occupy the state of Wisconsin.  



OCCUPY WALLEYE

Take residence at the dinner table tonight...Wisconsin-style!

1 Tbsp. butter, melted
2 Tbsp. olive oil
1/4 cup fresh lemon juice
1 shallot, thinly sliced
2 cloves garlic, minced
1/2 tsp. salt
1/4 tsp. pepper
1/8 tsp. paprika
4 walleye pike fillets (2 lb.)
1/4 cup fresh dill sprigs

Heat grill to medium.  Whisk together butter, olive oil, lemon juice, shallots, garlic, salt, pepper and paprika in small bowl.

Place 1 walleye fillet in the center of large sheet heavy duty aluminum foil.  Spoon one-fourth of the lemon-butter mixture evenly over fish.  Sprinkle with 1 Tbsp. fresh dill sprigs.  Fold foil sheet to make packet.  Repeat with remaining fillets and lemon-butter mixture. 

Grill 6 to 8 min. or until fish flakes easily with fork. Carefully open foil packets and serve immediately.

Tip:
You can replace the walleye with any mild-flavored white fish, such as cod, haddock or perch.
