BIG MOUTH SMALL HEART Black Beans & Rice

Don't be surprised if you adopt this as a healthy, inexpensive go-to meal.


1 lb. black beans, rinsed
1 chopped onion
6 cloves garlic
2 smoked ribs or neck bones
Hot cooked white rice
Fresh chopped cilantro

Place first 4 ingredients in 1-1/2 or 2-quart slow cooker; add enough water to cover by 2-inches.  

Cook on HIGH 6 hours (LOW 10 to 12 hours) or until beans are tender.  Remove bones and season with salt and pepper to taste.  Pull meat off the bones, finely chop and add to the beans.

Serve beans over rice sprinkled with cilantro.

Tip:
Make it spicy by adding 1/4 tsp. ground cayenne pepper.
