Paul Problem Fish Packets

Paul Problem Fish Packets
Makes 4 servings

Need a quick, healthy dinner idea?  No problem.

2 cups low sodium chicken broth
1-1/3 cups TRADER JOE’S Harvest Grains Blend (see note)
4 cloves garlic, minced
8 fresh basil leaves, chopped
4 tilapia fillets, 6 oz. each
4 cups baby spinach leaves
1/2 cup julienne sliced sun-dried tomatoes, drained
4 tsp. olive oil
4 lemon slices

Heat grill to medium heat. Microwave broth in 2-cup glass measuring cup 3 minutes or until just boiling.

Place large sheet of heavy-duty aluminum foil on flat work surface.  Spray center with nonstick cooking spray. Bring up foil sides 2-inches all around to create pool, pinching corners slightly so that no liquid escapes while you assemble the packets. Layer with 1/3 cup grains, 1/2 cup broth, 1 clove minced garlic, 2 chopped basil leaves, 1 fish fillet (season with salt and pepper), 1 cup spinach, 2 Tbsp. sun-dried tomatoes and 1 tsp. olive oil.  Top with lemon slice.
Bring up foil sides. Fold top and ends to seal packet, leaving room for heat circulation inside.  Repeat with 3 more foil sheets and remaining ingredients.

Grill on indirect heat 15 minutes or until fish flakes easily with fork and grains are tender. Carefully open foil packets and serve.

Note:
TRADER JOE'S Harvest Grains Blend contains Israeli style couscous, orzo, baby garbanzo Beans and red quinoa.  Gluten free followers can substitute 2 cups instant brown rice and continue prepare as directed, using 1/2 cup rice in each packet instead of 1/3 cup Harvest Grains Blend.

Substitute 1/4 cup chopped fresh dill for 8 fresh basil leaves.
