Slow Simmered Salmon


The GOP primary will not be over anytime soon…

Slow Simmered Salmon

Although the primary season is moving along slowly, this healthy weeknight dinner will be ready in minutes.
 
1 Tbsp. olive oil
3 cloves garlic, minced
1 can diced tomatoes
1 lb. salmon filets
¼ tsp. Kosher salt
1/4 tsp. freshly ground black pepper
Lemon wedges

Heat oil in large skillet.  Add garlic; cook and stir 1 minute or until fragrant (do not brown.  Add tomatoes.  Bring to a simmer.

Add salmon, skin side down.  Season with salt and pepper.  Cover skillet and cook on medium heat 6 to 8 min. or until desired doneness.  Squeeze lemon over fish.

Tip:
Serve with a tossed salad, crusty Italian bread to sop up the tomatoes, and a glass of red wine for your heart.
