Michael “Loath to Endorse” Bloomberg Black Pepper-Parmesan Scones

So delicious, you won't hesitate to recommend these to your family and friends!

1-3/4 cups flour
1/2 cup freshly grated Parmigiana Reggiano Cheese
1 tsp. cream of tartar
1/2 tsp. freshly ground black pepper
1/2 tsp. each salt, baking soda
2 tsp. sugar
4 Tbsp. butter, cut up
¾ cup milk

Heat oven to 450°F.

Combine flour, cheese, cream of tartar, black pepper, salt, baking soda and sugar in medium bowl.  Cut butter into flour mixture until it resembles coarse crumbs.

Make a well in the center and pour in milk.  Working quickly, blend ingredients together with a rubber spatula into a soft, slightly wet dough.  Turn dough onto well floured work surface.

Quickly roll dough into an 8-inch circle.  Cut circle into 8 wedges. Separate each of the sections and bake on greased baking sheet 10 to 12 minutes or until scones are lightly browned.  Serve warm with salad, grilled chicken or fish.

Tip:
For spicy scones, add 1/4 tsp. cayenne pepper.
