Condi Rice Salad

Condi Rice Salad
Makes 8 servings


A pretty sweet idea...



3 Tbsp. orange juice
1/3 cup olive oil
2 Tbsp. white vinegar
1/2 tsp. salt
1/4 tsp. pepper
1 qt. steamed rice (see note)
1 can (11 oz.) mandarin oranges, drained
3/4 cup kalamata olives
1/2 cup toasted slivered almonds
3 green onions, sliced
1/4 cup coarsely chopped fresh basil


Whisk together orange juice, olive oil, vinegar, salt and pepper.


Mix remaining ingredients with dressing in large bowl.


Note:
I like to purchase the rice for this salad from a local Asian restaurant.  If you would like to cook the rice yourself, use 2 cups uncooked rice and follow the instructions that accompany your rice cooker.


Good with brown rice or basmati rice, too.
