FOLLOW THE MONEY Honey Cookies
Makes 42 cookies


Exceptional flavor from honey, orange and candied ginger.

1/2 cup butter-flavored shortening
1/2 cup honey
1/2 cup sugar
1 egg
1 tsp. orange zest
1 tsp. baking soda
2 cups flour
1/4 cup chopped candied ginger
Powdered sugar 

Heat oven to 375°F.

Melt shortening, honey and sugar in sauce pot over medium low heat; cool.

Beat egg, orange zest, baking soda and cooled honey mixture.  Blend in flour and ginger.

Drop by tablespoonfuls onto parchment-lined baking sheet 2-inches apart. Bake 10 to 12 minutes or until deep golden brown.  Lightly dust with powdered sugar before serving.

Tips:
1. I used a No. 70 cookie scoop to portion cookie dough.
2. Make ice cream sandwiches!  Fill 2 cookies with softened vanilla ice cream.  Wrap in plastic and freeze 1 hour.
