Controlled Tax Cuts Cucumber Salad

Controlled Tax Cuts Cucumber Salad
Makes 6 servings

There's no limit to how many dinners and buffets can benefit from the company of this popular summer salad.

2 medium cucumbers
2/3 cup sour cream
1/2 tsp. sugar
1 Tbsp. white balsamic vinegar
2 Tbsp. chopped fresh dill
1/4 tsp. freshly ground black pepper
1/2 small red onion, cut into wedges

Peel cucumbers.  Run a fork lengthwise down the length of the cucumbers to create a “flower” look on edges.  Slice cucumbers and place in colander.  Sprinkle with salt and let drain 30 minutes.  Blot gently with paper towels to remove excess water.

Mix sour cream, sugar, vinegar, dill and pepper.  Toss gently with drained cucumbers and onion.  Chill 2 hours and stir before serving.

Tips:

  1. Great with grilled pork tenderloin.
  2. Just as good prepared with plain Greek yogurt or reduced fat sour cream.
