VOTER PROFILES Pan Roasted Chicken

Crisp, fresh and exciting!

1/2 cup flour
1 tsp. salt
1 tsp. garlic powder
1/2 tsp. paprika
1/4 tsp. cayenne pepper
6 Tbsp. olive oil
8 boneless skinless chicken thighs
1/3 cup white wine
3 Tbsp. lemon juice
2 Tbsp. fresh parsley

Mix flour, salt, garlic powder, paprika and cayenne.

Heat oil in large skillet on medium-high.

Coat chicken with flour mixture (there will be some left over).  Add chicken to skillet and cook until crisp and golden brown, about 6 minutes on each side.  Remove from skillet and keep warm.

Add wine and lemon juice to skillet; stir to loosen browned bits in skillet.  Cook on medium-high 2 to 3 minutes or until mixture is golden brown and reduced.  Pour mixture over chicken; sprinkle with parsley.
