Let me see if I understand this correctly.  Gun permit, OK to vote; student ID, no way.

Voter Privilege Scam Summer Fruit Salad
Makes 6 servings


No tricks here...just fresh, seasonal produce and the flavors of Mexico.

3 Tbsp. fresh lime juice  2 Tbsp. olive oil 
¼ tsp. each salt and freshly ground pepper
1 jalapeno pepper, seeded and minced
5 oz. (7 cups) arugula leaves
1 romaine heart, chopped (5 cups)
2 shallots, thinly sliced
3 cups seedless watermelon chunks (1-inch chunks)
1/2 cup coarsely chopped cilantro leaves
4 oz. queso fresco, crumbled

Whisk together vinegar, oil, salt, pepper and jalapeno.

Combine arugula, romaine, shallots, watermelon, cilantro and queso fresco in salad bowl.  Toss gently with dressing.


Variation:
Classic Watermelon Salad
Omit jalapeno and cilantro and make the following substitutions:

  • substitute vinegar for lime juice
  • substitute feta cheese for queso fresco
